Day Thirteen
Day thirteen was one of those magical days where the clouds parted, the sun shone, and the writing gods bestowed their goodwill upon me.
I exceeded my word count goal for the day. Yay!
It's unreal how fast one can fall behind and start falling into the kind of thinking that says, "You know, I think the floors need one more pass with the Swiffer." Or, "I really do need to check out that Tom Selleck series my friend Charlie told me about. Who doesn't love Tom Selleck?"
I sat down at my desk today, and the words started to flow.
I had a sense of a moving sidewalk beneath my feet, and I could see the characters interacting, see them moving toward their inevitable climax.
I told myself, "Self, you'll be able to reach The End easily. In fact, you'll be able to take Thanksgiving week off like you planned and eat an extra slice of lemon icebox pie.
Yes, lemon icebox pie.
What can I tell you? I'm from the south.
Since I'm feeling especially wordy today here's how you make it:
Lemon Ice Box Pie (or key lime pie if you're feeling fancy.)
1 8 oz. package of softened cream cheese
1 can Eagle Brand sweetened milk
Lime or lemon juice (you can use reconstituted or fresh)
1 graham cracker crust
Cool Whip
1. Blend the cream cheese and sweetened milk with a hand mixer. You can mix in the blender if you're lazy like me.
2. Add the lemon or lime juice until you like the way it tastes
3. Pour into graham cracker crust
4. Chill
5. Slice, top with Cool Whip and prepare to enter Nirvana
Don't ask me how this became a holiday tradition. All I know is that friends and family wait all year for it. Yum!
